As its name says, this cut has loin and fillet separated by a 'T'-shaped bone. Fine cut that comes from the middle part (short Lion) of the beef loin. It is a very popular cut, one of its presentations is in the loin portion which gives it a delicious flavor and an excellent texture; and the other is fillet which makes it softer. It is an attractive cut to the eye, it has light marbling.
